In this class we’ll take a look at El Salvador as a country, learning about the cultural and historical backdrop that created what was once the 4th largest global producer of coffee (despite it’s tiny size), and is now #21 in global production. We’ll look at the challenges being faced by producers in country, hopefully come to understand our role in addressing these challenges, and learn the ways we partner with those at origin. We will deepen our understanding of the partnership we enter into when we buy green coffee. The class will focus on two growing regions: Ahuachapan (which is close to the capital, San Salvador), and Chaletenango (high in the Sierra Madre mountain range), the varietals El Salvador is most known for, and their perfecting work with honey processed coffee. Participants will leave with a better understanding of the coffee they’re working with, and respect for those who made it possible for us to roast and, ultimately, drink! 

This class will be led by Rebecca Cooper. Rebecca was a prodcution roaster and green coffee buyer for Olympia Coffee Roasters.

Brewed coffee & 1 lb of high quality of green coffee from El Salvador will be provided for each participant.
